THE DINNER SCENE DETAILS:
Boone hates sweet potatoes. (Who knew! I did… but we tried)

Every child we have fell off his chair during this short dinner. 🏆

Ben and I threatened one kid (I won’t say who) that we would make him move into the chicken coop if he didn’t get it together. But we sang it, in a lullaby tune so it was less scary cuz #gentleparenting.

Sweet Potato Nachos

Delicious and nourishing dinner in under 30 minutes? yes please. You definitely need these sweet potato nachos in your life.
Servings 4

Ingredients
  

  • 1-3 Sweet Potatoes thinly sliced
  • Olive oil
  • Taco seasoning spices I used cumin, paprika, garlic and onion, and a dash of cayenne
  • 1 lb Ground Beef (or chicken or turkey)
  • Cheddar cheese shredded
  • Corn
  • Olives
  • Onions chopped
  • Tomatoes chopped
  • Black beans

Avocado Lime Sauce

  • 1/2 Avocado
  • 1/3 cup Greek yogurt
  • 1-2 Limes juiced
  • 1 bunch Cilantro
  • Salsa for topping

Instructions
 

  • Preheat oven to 400º
  • Drizzle sweet potatoes with olive oil and taco seasonings
  • Spread evenly on baking sheet and bake until crispy
  • Cook ground beef on stovetop and season with taco seasonings
  • Meanwhile, add all ingredients for avocado lime sauce to a blender and blend until smooth.
  • Once sweet potatoes are cooked, add cheese, meat, and toppings of choice
  • Bake until cheese is melted
  • Once Nachos are finished, top with salsa and avocado lime sauce
  • Enjoy!
